Looking through my blog I've realised I've started to look like a one trick (baking) pony. This is not my intention, i have many reasons for writing this blog -
You can probably tell from the pictures that R preferred his tuna left whole (it looked more man-ly) where as i liked to cut mine up in pretty little pieces. Overall the end result was completely different to Inas recipe but still looked ( and tasted ) as mouth - watering as the recipe had done on the television.
Grilled Tuna Steak with a spicy dressing.
2 small hand sized tuna steaks about an inch thick
Dressing
2 parts olive oi
1 part balsamic vinegar
Juice and zest of one lime
Half red chill - depending on your tastes add seeds and the membrane if you like it hot!
Half red onion - chopped small
2 spring onions - chopped small
Small handful fresh coriander
Dessert spoon full of toasted sesame seeds
One avocado peeled and cut into chunks
Salad leaves - pref including rocket
Chunky pieces of cucumber and tomato
Make up the dressing and leave to settle while you prepare the tuna
Put the grill pan on to a high heat
Arrange the salad leaves, tomato, cucumber and avocado on two plates
Brush the tuna steaks with olive oil/ rapeseed oil and season generously with salt and pepper
Place on the grill for just under two minutes on each side ( you don't need to touch your steaks other than to turn them over, also you want the tuna to be slightly raw in the middle, if cooked all the way through it can go tough).
Lay the tuna either man style or lady style on the salad and drizzle over the dressing.
Potato Salad
large handful of Cheshire/new/jersey or any salad potatoes you have cut up into small chunks
Zest and juice of one lemon
Handful of chives- finely chopped
Salt and Pepper
Two/ Three good tbls of mayonnaise ( i used Hellman's low fat)
2 hard boiled eggs.
Put a pan of salted water on to boil then add the potatoes and cook for about 15 mins so they are just cooked through - take care not to over cook as they will fall apart.
Fill a small saucepan with water and when boiling add the eggs for around ten Min's then remove from the heat and immerse them in cold water to stop them from turning black.
Drain the potatoes and peel the eggs, make sure both are cold before making the salad.
Chop the eggs and add to the potatoes with the lemon juice and zest, mayonnaise, salt and pepper and the chives.
Give a quick taste to check the seasoning ( R likes a teaspoon of caster sugar added sounds disgusting but it actually intensifies the flavour)
If you've got any , sprinkle over some chive flowers just to give it a girly edge.
Bon appetite
- Make use of all of many cook books i own, as i can count on one had the ones i actually use.
- Watch all of the cooking programmes that are backed up on our sky planner and instead of intending to copy the recipes, make sure i make them.
- To change my unusual and stupid eating habits.
- To gain more skills and learn everything i can about the art of cooking.
It all started this morning, with 10 minutes spare i scrolled down my Ina Garten back to basics recorded programmes and randomly switched one on. Ina has a way of captivating me and i become slightly dazed in front of the tv, I'm not sure if its her American voice or the way she calmly throws everything together, anyway she was making grilled tuna rolls which consisted of a tuna steak the size of a small country and a dressing made up of wasibi powder, olive oil, lime juice and zest, hot sauce, sesame seeds and avocado, with my stomach howling and my eyes buldging at the screen i suddenly had inspiration on what to make for tea. However i knew a few obstacles would stand in front of me : One tuna roll would not be a sufficient and substantial enough tea for R, the chances of me locally finding that kind of quality tuna steak would prove difficult never mind trying to hunt down the wasabi powder, this said i was undeterred. I decided to substitute the wasabi powder for a finely shopped chilli, swapped the soy sauce for balsamic vinegar ( since the wasabi powder was not involved i felt it lost the appeal for soy sauce) added some fresh coriander and managed to find some suitable tuna steaks. I had decided on a tuna salad and so R was nt left doubled over i hunger i made use of some cheshire potatoes i had bought a few days before.
